Sparkling Raspberry Lemonade

Valentines Day. Do you celebrate? I’m sooo not a Valentines Day celebrator. I don’t want to find a babysitter or pay for overpriced food. Give me a home cooked meal and Netflix and I’m a happy girl! I do think Valentines day is a nice reminder to stop and tell the one you love how much they mean to you. Life with three kids is crazy, and we don’t always have the chance to stop and just enjoy being with each other, so Stuarty, here’s to another year of a house filled with as much crazy as there is love! Wouldn’t want to do this with anyone else but you!

Ok sappy out of the way!

Although we don’t exchange gifts I can usually count on him bringing home flowers and a bottle of prosecco for me. So with that I thought I would share a fun sparkling lemonade that is the perfect shade of pink for Valentines day, you know, if you’re into that kind of thing

Can we pause for a second to admire these amazing champagne glasses. I saw them at Nordstrom before Christmas and just couldn’t get them out of my mind. I happened to be doing a little shopping with Santa (AKA my mom) that day and she snuck back in and bought them for me to unwrap Christmas Day! I can’t find the glasses online anymore, but I did link to similar styles!Quick tip: use frozen raspberries in the drink! It helps keep the cocktail cold, and after the last sip is gone the raspberries should be perfectly thawed for eating.
I usually only make the whole recipe when hosting a baby/wedding shower but if its just us at home I will pour 1/4 cup of the raspberry lemonade in the champagne glass, fill the rest of the way up with prosecco, and garnish with the raspberries and mint. Tasty!

This is the easiest recipe, but is such a crowd pleaser.

Sparkling Raspberry Lemonade

1 bottle of prosecco

1 bottle Simply Raspberry Lemonade

1 bag frozen Raspberries

Mint for garnish

(*If you plan on making this for a big group such as for a baby or wedding shower I would use two bottles of prosecco and 1 bottle of the lemonade!)

In a pitcher combine the prosecco with about half the bottle of simply raspberry lemonade and stir to combine.

Pour into champagne flutes and top with 2-3 frozen raspberries and a sprig of mint.
